It may say fall on the calendar, but it already feels like Old Man Winter has stopped in for a very long visit. The only reason I like winter the excuse to eat soup. Add a loaf of fresh made bread or cornbread to go along with it, and the kitchen aromas make it that much easier to tolerate the cold!

Hey, Let’s Talk!

I’m always intrigued by h o w casseroles combine several different ingredients to make a good easy dish. AND I know that when reading the title of this week’s column you’re probably thinking, “Oh, that’s just great - another casserole.” In my column “Tot Wars” back in THE Mansfield Enterprise issue for the week of 4/22/2019 we talked of two - But give this one a read and see if this recipe doesn’t sound really good and a little different than others I’ve visited with you about.

The old sayi n g “Everything Has A Reason” which is true with a lot of the t o w n s , rivers, bay ous, etc. Most of our places in our parish are named from early settlers, Indian folklore and legend. DeSoto Parish many believed to have been named for Hernando DeSoto the Spanish explorer actually was named for Joseph Marcel DeSoto of Bayou Pierre.

Did You Know?

Some local historians think the Yankees were soundly defeated at the Battle of Mansfield and Pleasant Hill never to be heard of again. Of course the rebels decidedly defeated the Yanks but the destruction and deaths were far from being over. Union General Banks set fire to much of Natchitoches and Campti plus a number of plantation homes as they retreated. The dejected Yankee soldiers took their frustration out on the citizens (mostly women and children) along their retreat path. Homes and livestock were left in shambles. A Union officer declared the arson was disgraceful to the army of a civilized nation.

Hey, Let’s Talk!

I did several of the turkey leftovers recipes that I reported to you and still think that the Turkey Tetrazzini is my favorite although the plain ole turkey sandwich just can’t be beat. What better says ‘Holidays’ than a turkey and swiss sandwich with lots of mayo, a slice of cornbread dressing with cranberry sauce (Whole Berry? Jellied?? YES, Please!) and a good College Football Bowl Game on the tube? Oh Man! Geaux Tigas!!

I have always loved signs. Even as a kid, I was enamored with the old Burma Shave signs. The only time I ever saw one of those was on a family vacation to Wisconsin. The sign was old then, but Mom and Dad encouraged us to keep watching them as we passed by.

Did You Know?

December 25 is the most important date in the history of Mankind. It is the birth of our Lord and Savior Jesus Christ. Most of us know the story well, yet it never gets old to a Christian. How Joseph and Mary on the way for the census stopped in Bethlehem and realized the birth of the child was near but there was no room at the inn. The only place they could stay for the night was in the barn with the animals. When the child was born the only cradle or bed was in the manger with straw for the child to be placed.

Without doubt this is the most important date in human history but there are two other very important historical dates that this writer would like for us to remember during these Christmas Holidays. The year 1968 was one of the more discouraging years in modern U.S. history. The Vietnam War dragged on; the nation grieved over the assassination of Martin Luther King, Jr. and Robert Kennedy; there were riots in the streets.
