Paula Shuford Callender of Pleasant Hill Named Recipient of Presidential Excellence Award

On August 3, 2020, President Donald J. Trump announced the recipients of the Presidential Awards for Excellence in Mathematics and Science Teaching (PAEMST) and the Presidential Awards for Excellence in Science, Mathematics and Engineering Mentoring (PAESMEM). Paula Shuford Callender of Pleasant Hill High School was one of the two recipients named from Louisiana.

The French conversion to English reads Eggplant or Squash Part Three ... but I thought the French translation was cooler sounding. Besides If I just said Part Three you probably wouldn’t start reading my column this week - but, here we are. In last week’s column I told you about the comedy of errors that Susan and I experienced while trying to make a recipe tragically titled “Baked Eggplant Parmesan” and by trying to duplicate it we had many mutant varieties with none turning out good. I mentioned that while looking through other Baked Eggplant recipes on the Internet and in my own cookbooks I found several promising sounding variations. I decided to try these and am glad to report success.

Few DeSoto Parish residents realize the rich culture and heritage of our area. For seven years it has been my pleasure, at the suggestion of Enterprise owner and Editor John Blanchard, to write this weekly article on history - primarily DeSoto Parish History. None of the topics are more iconic than the Rock Chapel. Research on the Rock Chapel constantly renders new and interesting facts.

In the year 1850, the Bayou Pierre Community, located in the piney woods of DeSoto Parish in Northwest Louisiana, was a small congregation of Catholics and they decided to establish a Catholic Church there. A church was built in 1856 by Father Pierre, the first pastor. Father Pierre, whose name was coincidently the same as the community, came once a month from Natchitoches on horseback or boat. Legend has it that while Father Pierre was reading a prayer book accidentally drowned when the riverbank where he was standing suddenly crumbled into the Red River.

Frozen Leftovers

I know I’ve talked with you about clearing out my freezers during the COVID caused shortages at the supermarkets and I have had some interesting results. However, some of the leftovers I’ve put up didn’t look too appetizing after re-heating. Some even had freezer burn on the edges or ice crystals covering them – Brrrrr. Soooo, this past weekend OUT all that kinda stuff went!

During the middle and late 1930’s America was deep in the Great Depression but movies were in vogue. It was the one thing both the older and younger could go to for a few hours and dream of better times ahead. The possible filming of Margaret Mitchell’s bestseller “Gone With The Wind (GWTW)” was on everyone’s mind. Who could possibly be chosen to portray the Rhett Butler part other than Clark Gable? Almost everyone agree that Gable should be Rhett except Gable himself. It’s not that he didn’t want the role but he said, “It is simply that Rhett is too big an order for any actor to tackle who is in his right mind.” Clark realized he needed money to get a divorce in order to marry Carol Lombard so he signed on in August of 1938.

I’m smack dab in the middle of a kitchen remodel and am down to hooking up the plumbing under the sink. I replaced the old shallow double bowl stainless with a satin nickel single deep bowl with an apron front. Piece of cake, right? WRONG! All you have to do is plan it out carefully and if there are any cuts measure twice

On July 4, 1776 after voting to approve the Declaration of Independence the Continental Congress advanced the following resolution “Franklin, Adams and Jefferson be a committee to develop a seal of the United States of America”.

A Gift?

Sam Sifton is the Editor of the Cooking Section for the N.Y. Times and frequently has some comforting and sometimes intuitive thoughts to open the weekly section especially during these quarantines. A few weeks back I saved this excerpt, “Cooking, that joyful act, seems near powerless to bring any comfort in the face of our grief and worry (…) and yet it is not. It’s the one thing you can do that can make someone else’s life a little better if only for a few minutes. It is a way to offer (them) a gift.”
