Hey, Let’s Talk! “Chee-Bugah” Casserole

To paraphrase Saturday Night Live’s late John Belushi in his ‘Greek Diner’ skit: Customer ily will love (Charlotte Miller take note!).

Ms. McLaughlin tells us that the recipe is easily doubled or tripled and you can substitute any kinda cheese you want. To start, cook 6 slices of lean bacon until crispy remove to drain and and chop then pour off half of the drippings for reserve. Sauté 2 thinly sliced yellow onions in the remaining drippings until caramelized and browned (about 30 min.?) then add a Tbsp. of Wooster (Worcestershire Sauce for the proper) with salt and pepper before transferring to a bowl. Brown a pound and half of very lean ground beef, stir in a quarter cup of ketchup and 2 Tbsp. of yellow mustard and let cool. Spread beef mixture in the bottom of a greased 3 qt. baking dish and top with the onion mixture and the bacon then arrange 8 American cheese slices over the top. Cut 3 hamburger orders two cheeseburgers and a coke and Belushi’s greasy aproned diner owner turns and shouts, “Chee-Bugah, Chee-Bugar – No Coke just Pepsi!” Those of you who remember that old skit know what a hilarious classic it was. John had a similar skit called ‘Samurai Tailor’ that was pretty funny, too.
